Now in our 22nd year, For the Love of Food Cooking School has been providing recreational cooks with engaging, interactive and fun hands-on cooking classes with a strong emphasis on Healthy Cooking and Food's power to protect, energize and heal our bodies.
You'll learn how to prepare food deliciously and healthfully while drawing the most nutrition out of your foods, what herbs and spices are beneficial for your health, and how food can keep you in optimum health.
In addition to being a Certified Executive Chef, who has taught at the most prestigious professional Culinary Schools for 30+ years, Chef Diane also holds a degree in Nutrition and is a Certified Nutrition Therapist.

At For the Love of Food our cooking philosophy is to teach you not just How to Think and Cook Like a Chef, but also the Science and the Why's behind each cooking method - making sure you're having fun at the same time!
For the Love of Food takes pride in using only organic produce, dairy & chicken; grass-fed butter, beef and lamb and pastured eggs.
All our classes are 100% hands-on and participatory, but if you’d prefer to sit back and watch, that’s okay with us! All classes include a packet of the evening’s recipes, plus a full meal with dessert and wine (except dessert classes). Feel free to bring your favorite apron or wear one of ours. All you need to bring is a smile, a great attitude, an appetite and a desire to make new friends and learn a new skill. We can’t wait to meet you!

A 6-class series that will take you from Kitchen Prentice to Kitchen Pro in six weeks - and regardless of where you start with your kitchen skills, we can guarantee you'll leave a more confident, courageous and self-assured cook!

Class 1 & Welcome: Starting with the all-important Knife Skills class, you'll learn not only knife & kitchen safety, but the only 3 knives you'll really ever need and how to use each of them; the proper way to sharpen and care for your knives so they'll last a lifetime; the amazing 'rock 'n' slide' method of cutting; how to roast & peel peppers, peel garlic (easily!), pit olives, chop herbs, peel & section different fruits; make a fabulous vinaigrette in seconds, what's been called "worth the price of admission" - how to dice onions so they'll never fall apart again, and more!
Class 2: If you have always wanted to know the secret to putting together an impressive dish in minutes, Sauteing & Pan Sauces is your answer. We will begin by learning to butterfly and cook chicken breasts, then gild them with a Mediterranean Tomato & Olive Sauce, a Port Wine Raspberry Walnut Sauce, and a classic Marsala Sauce with Mushrooms. We'll finish our meal with Orzo Risotto and Steam Sauteed Broccoli.
Class 3: Delving more into why different cuts of meat require different cooking methods, today we'll talk about the differences between Roasting & Baking, while we pan roast a steak and fish, oven roast some terrific sides, and finish with a flair.
Class 4: Trivia question - What is the most popular stew in the world?
We've done some dry cooking, so tonight we're going to explore the ever-popular wet cooking methods of Stewing, Braising & Poaching. We'll be making Braised Short Ribs of Beef, Mediterranean Fish Stew, Braised Leeks and Poached Pears with Chocolate Sauce.
Class 5: Everything tastes better with sauce, and tonight we'll be making several! Classic cold & warm emulsified Hot and Cold Sauces & Stock- think Mayonnaise, Hollandaise, Beurre Blanc as well as a classic white sauce or Bechamel, which we'll turn into a fabulous cheese sauce, and an introduction to the all-important skill of making stock.
Class 6: We're going to make Cream Soup while you get to show off what you've learned while making your own pan sauces.
All classes include recipe packets and a meal at the end of class

Spring in the Colorado foothills is an evanescent experience… it may be 65° and lovely or we may get 3 feet of new snow - who knows? So, with a bit of a nod to our uncertain weather, our menu will be a bit of winter with a touch of spring. Pomegranate Juice Cocktails, Blueberry Almond Dutch Baby Pancakes with Maple Creme Fraiche, Shakshuka with Poached Eggs, Seasonal Fruit Salad, locally roasted coffee and hopefully, sunshine.

Can you smell it? Is your mouth watering? Yes, it's true bacon makes everything better, and tonight we'll make our point with desserts. We'll greet you with some savory-sweet, Bourbon Bacon Jam on warm biscuits and some Bacon Spiked Maple Hot Chocolate. Then we'll tickle your palate with Apple Bacon Cinnamon Buns, Dark Chocolate Bacon Cupcakes and buttery, scrumptious, crumbly Pecan Sandies with Bacon.
Oh, yum!! You'll be the star of the Christmas Cookie Swap this year! :-)
